I say whilst you should always make sure to eat a healthy diet, rich in all of the main food categories such as Fats, Carbohydrates, Proteins, Grains, Dairy and so on, and so on.

But breakfast should also be a time when you can wake up and enjoy starting a new day – worrying about whether you can eat this or that, is a sure fire way to begin your day stressed.

Many people avoid eggs due to their perceived unhealthiness, but I am going to show you that you can have a healthy breakfast with eggs; it is just how you use them 😉

Now let me be crystal clear here; I am certainly NOT saying that just stuff your face with anything like a McDonalds double egg McMuffin (as if I would), but equally you should think about other things like whether you are cooking yourself and if all of your ingredients are fresh.

These things will ultimately make your morning more rewarding than forcing down a bowl of muesli because it has a little picture of a heart on the side of the box!

So to that end, when I say healthy what I really mean is wholesome, filling food that is free of food and made with lashings of fresh vegetables.

So let’s get started and see what kinds of healthy breakfast recipes with eggs we can come up with – My favorite is last:

Black Bean Breakfast Bowl

Ingredients

  • 2 tablespoons of fresh Olive Oil
  • 4 eggs - beaten to within an inch of their lives
  • 1 can of Black Beans (or 15 Ounces), drained and washed
  • 1 beautiful Avocado - peeled and sliced
  • 1/2 a cup of salsa - can make your own or buy from the supermarket
  • Salt & Pepper (ground) to your taste

Directions

  1. Heat your olive oil in a small pan over medium heat, depending on whether you have an induction cooker or not. Cook and stir your pre-beaten eggs until eggs are set and resemble what you would imagine an omelette looks like.
  2. Place your rinsed black beans in a microwave-safe bowl. Heat on High in the microwave until warm, about 1 minute. For those of you who sniff at microwave usage; perhaps this blog is not for you 🙁
  3. Separate the now warmed black beans, between 2 bowls.
  4. Place your scrambled eggs, avocado, and salsa carefully on top of the heated black beans & season with salt and black pepper.

Ingredients

  • 1 cup cooked white or brown rice - your choice but probably better with brown for breakfast
  • 2 thin slices cooked ham - cubed
  • 2 tablespoons ketchup - yes, ketchup 😛
  • 2 tablespoons of light cheese - grated
  • 2 eggs
  • Salt and pepper to taste
  • 1/4 teaspoon chopped fresh parsley

Directions

  1. Heat a skillet over medium heat, and coat with some quality olive oil.
  2. Add the cooked rice, 2 tablespoons ketchup, ham, and cheese.
  3. Cook and keep stirring until all the ingredients are well mixed & heated, this should be about 8 minutes. Scoop the mixture into a serving bowl and shape into an oval – this part is up to you. If you are just making for yourself and are hungry; you can just plonk it on a plate.
  4. In a bowl, beat your eggs and add salt and pepper to taste.
  5. Heat a small skillet coated with olive oil or butter over medium heat.
  6. Add your egg mixture & cook over medium heat until your eggs start to set slightly. Gently lift the edges, letting any uncooked egg mixture flow underneath. Use a spatula to gently fold the eggs into a cocoon shape. When eggs are completely set, remove from the heat.
  7. Place the omelet on top of the warm rice & run a knife gently through the top layer of the omelet. It should open like a butterfly – don’t worry if it doesn’t, it will still taste the same –  and drape over the rice.
  8. Sprinkle your pre-chopped parsley over the top to add flavor and color.

Easy Broccoli Quiche

Ingredients

  • 2 tablespoons butter
  • 1 onion, minced
  • 1 teaspoon minced garlic
  • 2 cups chopped fresh broccoli
  • 1 (9 inch) unbaked pie crust
  • 1 1/2 cups shredded mozzarella cheese
  • 4 eggs, well beaten
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter, melted

Directions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Melt butter in a large saucepan over medium to low heat and keep an eye on it that it doesn’t curdle.
  3. Add your chopped onions, garlic and broccoli.
  4. Cook nice and slowly, stirring every now and then until the vegetables are soft.
  5. Spoon vegetables into your crust and lightly sprinkle your grated cheese over the top – just don’t go over the top!
  6. Combine your eggs & milk and season with salt and pepper to taste. Stir in your melted butter and pour your egg mixture over the vegetables and cheese.
  7. Bake in your preheated oven for 30 to 50 minutes, or until center has set, enjoy the delicious fruits of your labor 🙂

Breakfast Egg Muffins

Ingredients

  • Olive Oil
  • 4 cups egg whites
  • 9 eggs
  • 1 pound ham ham, diced
  • 2 cups chopped spinach
  • 2 red bell peppers, diced
  • 2 green bell peppers, diced
  • 2 fresh jalapeno peppers, seeded and diced
  • 1 tablespoon minced garlic
  • 2 teaspoons onion powder
  • 1/4 teaspoon cayenne pepper
  • Salt and ground black pepper to taste

Directions

  1. Preheat oven to 375 degrees F (190 degrees C) & coat 24 muffin cups with your olive oil.
  2. Beat your eggs in a large bowl & add your egg whites to them and beat until smooth.
  3. Stir in your pre-chopped ham, spinach, red bell peppers, green bell peppers, jalapeno peppers, garlic, onion powder, cayenne salt and black pepper into the eggs.
  4. Pour the egg mixture into the prepared muffin cups to about 3/4-full.
  5. Bake in your already preheated oven until firm in the middle.
  6. Take out and enjoy.

Now for my personal favorite healthy breakfast including eggs recipe...

Egg on toast, (trust me)

EGG ON BREAD, (WITH A TWIST)

Ingredients

  • 2 teaspoons butter
  • 2 eggs
  • 1 slice of your choice of bread - toasted
  • Dijon mustard
  • 1/2 avocado - peeled, pitted, and sliced
  • 2 tablespoons grated Parmesan cheese, or more if you are feeling particularly cheesy

Directions

  1. Melt 2 teaspoons butter in a skillet over medium heat and then add your lovely eggs.
  2. Allow the egg whites to cook until mostly firm, and then go ahead and break the yolks
  3. Continue to cook until the eggs are completely cooked and aren’t runny anymore.
  4. Spread one side of your toasted bread slice (I recommend a nice thick piece of your favorite bread), with Dijon mustard.
  5. Place your avocado slice onto the mustard gently – or roughly; whatever you’re into…
  6. Put your cooked eggs on top of the avocado.
  7. Sprinkle some Parmesan cheese and salt & pepper over eggs.
